Os diabéticos também poderão consumi-lo – com moderação -, mas terão que usar estévia no lugar de açúcar e tirar da receita as 4 colheres de passas. O bolo é fácil de fazer e o tempo de preparo dele não ultrapassa meia hora. Anote a receita: INGREDIENTES

3 bananas prata ou nanicas 2 ovos grandes ou 4 pequenos 2 colheres (sopa) de óleo de coco ou de ghee 1 xícara de amaranto em flocos (vende-se em lojas de produtos naturais; se não encontrar, substitua por aveia) 1/2 xícara de açúcar demerara ou mascavo ou 10 colheres (sopa) de estévia em pó (diabéticos deve fazer obrigatoriamente com estévia) 1/2 xicara castanha-do-pará triturada (triture um pouco a mais para untar a fôrma) 1 colher (sopa) de fermento em pó 4 colheres (sopa) de passas ou ameixa sem caroço cortada ao meio (diabéticos devem retirar este ingrediente) 1 colher (café) de canela em pó MODO DE PREPARO Liquidifique as bananas, os ovos e o óleo ou o ghee. Sem parar de liquidificar, adicione o amaranto em flocos, o açúcar, as castanhas-do-pará trituradas e a canela. Por fim, adicione o fermento em pó. Incorpore as uvas passas ou ameixas. Unte uma fôrma com ghee ou óleo de coco e polvilhe com castanhas-do-pará trituradas. Leve ao forno preaquecido a 200°C, por cerca de 40 minutos. Preste bem atenção ao tempo e à aparência, pois, por ser um bolo úmido, não se aplica o teste do palito saindo seco da massa.
